What does “dehydrating food” mean?

How does a dehydrator work?
The operation of the dehydrator is very simple:
A heating element generates heat based on the set temperature, which can vary from 30°C to 75°C. This heat is diffused by a fan that creates a constant airflow through the perforated trays.
Unlike natural sun drying, this gentle airflow allows for faster dehydration and, most importantly, it is not affected by air humidity. Additionally, sunlight alters some properties of foods, such as vitamins and aromas that are sensitive to light.
What can I dehydrate?
VEGETABLES
Any type of vegetable can be easily dehydrated. Ideal for those who grow their own produce and don’t want to waste surplus harvest that can’t be consumed fresh.
FRUIT
Orchards often ripen all at once, making it impossible to eat all the fruit. As a result, overripe fruit spoils and gets wasted. By dehydrating it, you can use 100% of the fruit you grow or purchase.
MUSHROOMS (and seasonal products)
Dried mushrooms are a delicacy many don’t want to give up; dehydrating them is very simple and their flavors are even enhanced.
