A simple and tasty recipe to fill up on vitamins and mineral salts
Red beetroot is a food rich in fiber, vitamins and mineral salts, composed of 91% water and therefore excellent for fighting water retention and promoting a sense of satiety, all with a very low calorie intake, approximately 43 calories per 100g of cooked product.
The fibers present in beetroot help the intestine and contribute to keeping blood cholesterol levels under control, while mineral salts including iron, potassium and magnesium, together with B vitamins, help to strengthen the immune system.
This food can be eaten raw, sliced very finely, or it can be used as a side dish after being boiled, cooked in a pan or in the oven.

Ingredients
- 300g of beetroot
- 1 pot of low-fat yogurt (or Greek yogurt)
- 30 g of butter
- 40 g of flour
- 2 carrots
- 1 onion
- 40 cl vegetable broth
- Parsley oil, salt, pepper
Preparation
- Wash and clean the vegetables
- Cut very thin beetroot sticks to leave raw to garnish the dish
- Place all the ingredients EXCEPT the yogurt and parsley in the jug.
- Operate the blender with the Soup function
- Once the program is complete, adjust the salt and consistency if necessary (see below how to adjust the consistency or add ingredients) and at the same time add the jar of yogurt.
- Blend 3 or 4 times for 20 consecutive seconds using the Touch function
- Plate adding the raw beetroot sticks, fresh parsley and dried fruit or seeds to taste.

How to change the density of soups and creams
If you want to change the density of a cream or a velouté, you can do so by adding wholemeal flour if it is too liquid, or by adding water or broth if it is too thick. To mix after the corrections, use the Touch function for the necessary time (about 30 to 60 seconds).
