How to Make Homemade Sofficini in the Air Fryer
- Start by peeling and cutting the carrots into not too large pieces, then cook them in a steamer or boil them.
- Meanwhile, in a non-stick pan, heat the milk with a small knob of butter and bring to the boil.
- When the milk starts to boil, lower the heat and add a pinch of salt and all the flour, stirring well. Let it cook until the mixture comes away from the sides of the pan by itself, then turn off the heat, remove it from the pan and let it cool.
- While the mixture cools, the carrots will be ready and you can proceed to reduce them to a cream with an immersion blender.
- Wash the potatoes well if you have chosen a type where you can eat the skin, otherwise peel them and cut them finely with the help of a mandolin. A little trick: leave them to soak in cold water so that they release some of their starch, this way they will be even crispier!
- Roll out the dough with a rolling pin to a thickness of about 3-4 millimeters and let it rest for 5 minutes. At this point, make the discs for the sofficini: take the ravioli mold and press it on the dough to cut out the discs, if you don't have this tool, use a pastry cutter.
- Place the chopped ham and the pizza mozzarella previously cut into small cubes in the center of the disc, moisten the edges of half a circle with water and close into a crescent shape, taking care to press well on the sides, if necessary help yourself with a fork.
- Pass the crescents in the beaten egg and then in the breadcrumbs mixed with a pinch of salt.
- Drain the potatoes and dry them well with a clean tea towel, lay them out on the greased baking tray and brush them with a little oil before seasoning them with salt and pepper.
- Cook your soufflés in the air fryer for 10-12 minutes at 190° and, 3-4 minutes before the end, add the potatoes.
- Once everything is ready, all you have to do is plate it as you like and enjoy your delicious meal.
