Soy and Fennel Marinated Chicken with Curry Cream and Caramelized Onions

Chicken Wings Ingredients:

  • Chicken Wings 8
  • 00 flour 100g
  • Eggs 2
  • Breadcrumbs 100gr
  • Salt to taste
  • Pepper to taste
  • Fennel seeds to taste
  • Soy sauce to taste
  • Aromatic herbs to taste

Caramelized onion ingredients:

  • Red onions 2
  • Sugar 50gr
  • Red wine vinegar 50ml

Curry cream ingredients:

  • Potatoes 2
  • Milk 50ml
  • Curry to taste
  • Salt to taste

Procedure:

How to Cook Chicken Wings in Air Fryer

  1. Place the chicken wings in a bowl and add: a little salt, ground pepper, fennel, herbs to taste and soy sauce. Massage everything and let it rest for at least an hour in the fridge.
  2. Wash and peel the potatoes, then cut them into cubes and cook them in a steamer for about 15 minutes, or until they are soft.
  3. Peel the red onions and cut them into julienne strips. Cook them in a saucepan with the sugar and red wine vinegar for about 30 minutes, covered and on a low flame, taking care to stir them from time to time.
  4. When the potatoes are ready, mash them while still hot with the help of a potato masher directly into a tall container and add half a glass of hot milk, a pinch of salt and curry to your liking. Use an immersion blender to obtain the cream.
  5. Once the chicken has marinated, proceed with an English breading: pass it in flour, in two previously beaten eggs and finally in breadcrumbs.
  6. Preheat the air fryer for at least 5 minutes at 190°, insert the chicken and use the appropriate program. When the chicken is golden brown it will be ready.
  7. All you have to do is plate it: arrange the curry potato cream on the plate, a generous portion of caramelized onions and the crispy chicken.
