Ingredients

  • 800 g of chickpeas (weight already cooked)
  • 1 leek
  • 1 courgette
  • 3 or 4 sage leaves plus some for decoration
  • Coriander seeds
  • A handful of pistachios
  • Half a glass of coconut milk
  • Salt to taste
  • Pepper to taste
  • 3 tablespoons extra virgin olive oil

Preparation

  1. Drain the chickpeas from their preserving water or cooking water
  2. Remove the green part and the more fibrous outer leaf from the leek and cut it into slices.
  3. Also cut the courgette into slices. Insert the chickpeas into the extractor, then the leek and finally the courgette.
  4. Allow the auger to mix all the ingredients well and as soon as the basket is full, open the drip-saving cap.
  5. Put the 3 tablespoons of oil and chopped sage in a pan, let it wilt a little and add the puree obtained from the extractor, a pinch of salt and pepper
  6. Add the coconut milk and let it flavour well for about 10 minutes on the heat
  7. Turn off the heat and add the pistachios roughly chopped with a knife, a pinch of coriander and a few sage leaves to decorate.
  8. Complete with a drizzle of oil and a slice of toasted bread
