A delicious recipe that helps reduce waste
Do you use the juicer every day, would you like to find a way to recycle fruit and vegetable waste, but you don't know how to do it?
You should know that the waste produced by the extractor to obtain the juice is nothing other than tasty and healthy fiber , which with a little imagination can be reused in the kitchen in many recipes, to make them tastier and enhance them.
Recovering waste is good for you first of all, because it allows you to introduce more fiber into your diet, and then also for your wallet and the environment, because it significantly reduces waste.
But what are the infamous “fibers” in practice? And why are they so good for you?
Fibers are plant polysaccharides that the human body is unable to digest and absorb. Their nutritional value, although not high, is very important for human health and are partially or completely fermented by the bacterial flora of the colon.
Two types of dietary fiber are commonly distinguished:
- Insoluble fibres (cellulose, lignin), which have the ability to absorb a lot of water, are a valid aid in cases of constipation and also reduce the risk of colon cancer .
- Soluble fibers (gums, pectins and mucilages), which with water form a gelatinous mass with satiating power and which reduces intestinal absorption of digestive products. For this reason, soluble fibers are particularly useful in slimming diets .

How to reuse extractor waste
The most important thing in the kitchen, to recover the waste produced by the juice extractor is… imagination!
First of all, when you prepare to extract a juice, consider the possibility of using the scraps and start thinking about what you could do with them. If you intend to reuse them, eliminate from your ingredients all those parts that once in your mouth could bother you, such as seeds, hard peels, hairy peels, cores, skins, stems.
Among the most recovered are certainly the scraps of vegetable milks , reusable to prepare sweet or savory doughs, to make burgers or veg meatballs . But even the scraps of fresh juices are fine: if for example you have a dryer available, you can dry the fibers to create wafers, bars , raw biscuits or muesli .
The scraps can also be frozen, then passed through the extractor to obtain sorbets and ice creams . They can be stored in the refrigerator in an airtight container for a couple of days, or vacuum-packed for about a week.
Today, thanks to one of our VIVO Extractors, we were able to recover the waste from a juice prepared with apple, red cabbage, carrot and lime .
We thought of combining them with fresh aromatic herbs and cherry tomatoes , thus transforming them into a real condiment . We used it to enrich a recipe based on bulgur, a cereal also rich in beneficial properties.

Ingredients:
- 150g of juice scraps: 1 carrot, 1 apple, ¼ red cabbage and ¼ lime without peel
- A handful of parsley leaves
- Some chive stems
- 6 mint leaves
- 50 g of cherry tomatoes
- 100g bulgur
- Lemon juice
- Extra virgin olive oil
- Salt

Preparation
- Cook the bulgur according to the instructions on the package.
- Make the juice with the VIVO BIG MOUTH extractor and keep the waste aside
- Chop the parsley and chives roughly; cut the cherry tomatoes into quarters and add everything to the scraps.
- Add the bulgur and season with mint leaves, oil, salt and lemon.
- Let it rest for twenty minutes before serving.
